A Taste of Heaven - Pavlova

I went to bring a welcome bag to the spouse of a new company member - just a nice quick chat and visit to see if she needed help in adjustments in Singapore. Was I in for a wonderful surprise!

Jacqui fixed a wonderful lunch of chicken and potato salad, with a cabbage salad as well. I had never eaten anything like either of them, but they were wonderful and I will be trying these recipes out on my family. After the lunch, Jacqui informed us that she had made a wonderful Australian dessert called Pavlova. She explained that you make meringue and bake it in a moderate oven then let it cool. When we got there, it looked like this:

It was quite crisp on the outside. After it cools, then you whip cream and put onto the baked meringue. On the cream, you add your fruits of choice and you get a beautiful dish that looks like this:

It was believed to be originally made for the Russian ballerina, Anna Pavlova, during her tours of the area in the early 1900's and named after her. Both New Zealand and Australia claim to have been the original creators of the recipe, but no one really knows for sure. However, because Jacqui is Australian and she made it for us, today it is Australia's dish :-)

Pavlova - A large baked meringue dessert (size of a dinner plate or larger) that is crisp on the outside with a soft, marshmallowy-like center. It is topped with whipped cream and soft fruits. This is a standard summer dessert in both Australia and New Zealand and a 'must have' on Christmas - the summer months in Australia.

Thank you so much Jacqui for introducing me to such a wonderful array of foods today. The food was all delicious, but I loved the Pavlova - it was exquisite. You were so gracious in hosting Raye and I for lunch and what a wonderful visit.

One more word - Yum!
